ranch potato salad
Yesterday was a beautiful day, so we supplemented our typical Couch Potato Sunday festivities with a cookout at Tom’s house. We had ribs, some with dry rub, some with barbecue sauce, chicken soaked in three different marinades, salad, Apple Spice Cookie Bars, grilled pineapple with honey, brown sugar and rum, and this super easy Ranch Potato salad.
1, 1oz. package ranch dressing mix
1/2 cup light mayo
1/4 cup water
3lbs. red potatoes, boiled and cubed
4-5 slices bacon, cooked and crumbled
1 bunch green onions
1 cup celery, diced
1. In a large bowl, combine dressing mix, mayo and water.
2. Add potatoes, celery, bacon and onions.
3. Toss to coat and chill.
Easy as that.
