sweet hot slaw

I used to LOVE coleslaw. So much that when I was little I would beg my parents to go to KFC to get some “coldslop.” I found myself with an abundance of cabbage in the fridge, and with an upcoming potluck at Tom’s I decided to try making it myself. I didn’t want just any boring “coldslop” though, so this has a little kick!

1 head cabbage (I used a mixture of Savoy and green, because that’s what I had), chopped
1/2 white onion, chopped
1 cup light mayo
1/4 cup honey mustard (the mustardy kind, not the oil-based salad dressing)
2 tbs sugar
2 tbs white vinegar
salt & pepper to taste
1/2 tsp cayenne pepper

1. In a large bowl, combine cabbage and onion.

2. In a small separate bowl, mix together remaining ingredients.

3. Pour over cabbage and onion mixture. Toss. Chill. Serve.
