thanksgiving detox: simple salad

I ate so much over Thanksgiving weekend. I needed to detox with something light and healthy.

This is a summer salad that I saw on Everyday Italian at some point, but it was just what I needed after all that turkey, stuffing, mashed potatoes, gravy, pie and truffles.

No measurements here, just a list of ingredients, since this can be made to feed anywhere from one to a small army.

Romaine, torn into bite sized pieces
red onion, thinly sliced
Canellini beans (white kidney beans), drained and rinsed
Parmesan (get the good stuff for this), shaved with a vegetable peeler
fresh lemon, squeezed over salad to dress
EVOO, drizzled lighlty over salad to dress (you want something light and fruity for this, I have an HT Traders Sicilian one that I like)
salt and freshly ground pepper

So simple, but so good. I guess that’s why Giada gets paid the big bucks.
