granola

I have to have granola if I’m going to eat yogurt, but it’s soooooo expensive to buy it. It couldn’t be hard to make, right? It’s not. Here’s how it goes:

1egg
1 egg white
1 cup light brown sugar
1 tablespoon vegetable oil
1 teaspoon cinnamon
1/2 tsp allspice
1/2 tsp cloves
1/4 tsp salt
1 tsp vanilla extract
1 1/2 cup toasted oats
1/2 cup toasted, slivered almonds
2/3 cup raisins
1 T. all-purpose flour
1. Preheat oven to 350 degrees. Spread oats on a baking sheet and bake, stirring occasionally
for 15-18 minutes. Until lightly browned, but watch them carefully.
2. Reduce oven temperature to 325 degrees. Line small baking sheet with foil. Lightly oil or coat with nonstick spray.
3. In a large bowl, whisk egg, egg white, brown sugar, oil, cinnamon, all spice, cloves, salt and vanilla extract. Stir in raisins and toasted almonds. Add oats and flour.
4. Spread on baking sheet and bake for 30 to 35 minutes, or until golden brown.
This recipe is a little too clovey for me, but it’s a good technique to have under my belt. I think the next time I will sub out all of these spices and just use some pumpkin pie spice! (but this is still pretty good, and it sure beats $4 for a small bag)
