creamy onion soup

after this past weekend’s beautiful weather, it’s back to cold again.  & rainy for an added bonus.

here’s an easy & tasty soup to brighten your day!  a little bit creamy, a little bit cheesy & with beer!  because we don’t pass up an opportunity to put beer in food!  (although I would go with something a little less high gravity than the old skool barleywine we poured in there…..it was a little much.)

2 Tbsp. butter
2 lbs. yellow or vidalia onions, cut in half and then into slices
1 qt. beef broth/stock
salt and a good amount of freshly ground black pepper
1 1/4 cups half and half
1 tasty beer
1 cup shredded cheddar cheese

1.  heat the butter in a dutch oven or other heavy bottomed pot, over medium low heat.  add the onions & stir to make sure they all get coated with butter.  cook until golden brown, about 25-30 minutes, stirring occasionally.  keep it on medium low, & be patient (i’m saying that for me more so than you) so you don’t burn your onions.

2.  add beef broth & beer.  season with salt & pepper. bring to a boil & simmer for 30 minutes.

3.  after 30 minutes, add the half & half & cheese & stir until the cheese melts.  check the seasoning & serve.
