super sexy slaw

what better side for super sexy chicken?   it’s full of great color, interesting & bold flavors from the two different kinds of onions paired with cilantro, a slight little kick from the serranos, all without getting weighed down by an overabundance of mayo.  i’d say that’s super sexy slaw.

1 cup chopped green onions (white & green)
1/4 cup red wine vinegar
2 tsp honey
2 serrano chiles
2 tbs mayonnaise
1/2 cup canola oil
salt & pepper
1 sm head purple cabbage, shredded finely
1 sm red onion, thinly sliced (in half moons)
2 tsp poppy seeds
1/4 cup chopped cilantro

1. make the dressing. in a blender, add green onions, vinegar, honey, chiles, mayo, oil, salt & pepper. blend until emulsified.

2. in a large bowl, combine the rest of the ingredients, except cilantro. add the dressing & stir until combined. fold in cilantro and season with salt & pepper to taste. let sit in the fridge for about an hour before serving.
