the mutha of all potato salad

potato salads can be a let down, especially those that are bland, monochromatic & drenched in mayonnaise.

this blows regular potato salad out of the water.

great color.  big bold flavors, with sharp cheddar & mutha sauce.  interesting & most importantly, distinguishable textures with grilled potatoes & crisp bacon, this will be a very welcome dish at your next cookout.

adapted from cooking this and that

2lbs red potatoes, thickly sliced and quartered
olive oil to coat
salt & pepper
1 cup mayonnaise
about 1/4 cup mutha sauce
1/4 cup green onions, chopped
4 slices bacon, cooked crisp and crumbled
1 cup sharp cheddar cheese, grated

1.  heat grill to medium high. spray a large piece of foil, or grill pan with oil. toss the chunks of potato in olive oil to coat. season with salt & pepper. lay flat on the prepared foil, or pan, and put on the grill. cook for around 15 minutes, turning to make sure they cook evenly, or until potatoes are fork tender & crispy on the outside.

2.  while the potatoes cook, combine the mayonnaise, sauce, and a little bit of salt & pepper in a large bowl. set aside.

3.  remove cooked potatoes add to the large bowl with mayonnaise mixture. toss to combine. let the potato mixture cool a bit, add the green onions, bacon, and cheese then mix again to combine. Serve at room temperature, or chill before serving.

    I just had to comment and say hi to the corgi! I’m sure my Emma would love a taste of this too. She’s all about cheese, or any human food =)
