or as mr. lusher calls it, the $23 dollar salad, because that’s how much he spent on ingredients at the grocery store. but before you write this salad off completely, that total included a $4.00 extra large bottle of soy sauce, so really $19 isn’t bad for 8 servings of a salad that eats like a meal.
the veggies are all so fresh & crisp, it’s a perfect summer meal!
adapted from the pioneer woman cooks! (serves eight)
FOR THE SALAD
3/4 of a 16oz package linguine noodles, cooked, rinsed & cooled
1/2 head purple cabbage, sliced thin
1/2 bag baby spinach
1 yellow bell pepper, sliced thin
1 red bell pepper, sliced thin
about 2 cups mung bean sprouts
1 bunch cilantro, chopped & divided (save half for the dressing)
3 scallions, chopped, white and green parts
1 hothouse cucumber, sliced into bite size matchsticks
1 cup dry roasted peanuts
FOR THE DRESSING
1 whole lime, juiced
1/2 cup extra virgin olive oil
1/2 cup soy sauce
2 tablespoons toasted sesame oil
1/3 cup brown sugar, lightly packed
3 tablespoons fresh ginger, chopped
2 cloves garlic, chopped
2 jalapenos, chopped
1/2 bunch cilantro, chopped (the other half of the bunch)
1. in a huge bowl, mix together all the salad ingredients.
2. in a smaller, separate bowl, whisk together the dressing ingredients. pour over salad, toss & serve.
