this began as an entirely different recipe, but as we discovered the goat cheese was moldy contents of our fridge, it sort of…evolved.
at that point, only the dressing remained. & it is lovely, light & delicious with the sweetness of perfectly ripe strawberries. this dressing goes oh so well with the pungent blue cheese & peppery arugula, but i dare say it wouldn’t be half bad drizzled over a scoop of vanilla ice cream as well.
ARUGULA SALAD WITH STRAWBERRIES & BLUE CHEESE
12 strawberries, divided
2 tablespoons balsamic vinegar
1/4 cup extra virgin olive oil
1 teaspoon honey
kosher salt
4 oz arugula
1/3 cup blue cheese, crumbled
1/4 cup pine nuts, toasted in a dry skillet until fragrant
in a blender, puree 4 strawberries, the balsamic, olive oil & honey until smooth & thickened. season with a little kosher salt.
thinly slice the remaining strawberries & move to a large bowl. add the arugula, blue cheese & pine nuts. toss together to combine. add enough dressing to coat (there will be some leftover) & toss until the ingredients are all thoroughly dressed. alternatively, divide the salad ingredients between 4 individual bowls & drizzle dressing over top. serve & enjoy.
