meatless monday | white bean avocado sandwich

after a full weekend of eating {a lot of really good food}, drinking {a lot} & being {very} merry partying it up at my sister in law’s wedding in atl this past weekend, it’s time to detox.

& this is just the meal to do it.

minimal ingredients, minimal prep, just healthy, simple & delicious.

perfect, because we’re exhausted.

WHITE BEAN AVOCADO SANDWICH
serves 4

1 15 oz can white beans (cannellini or great northern) , drained & rinsed
1 lemon, juiced
salt & freshly ground pepper
8 slices hearty wholegrain sandwich bread
1 avocado, quartered, peeled & sliced thin
a few leaves of arugula or lettuce
alfalfa sprouts
a little red onion, thinly sliced

dump the beans into the bowl of a food processor & blend until smooth.  season with lemon juice, starting with around 2 tablespoons & salt & pepper, tasting for seasoning & adding more lemon, salt & pepper, if necessary.

add a thick smear of bean spread to each slice of bread & smooth to cover.  top four of the slices with avocado slices, onion & lettuce.  add sprouts to the other four slices, so they’ll stick.  top the avocado, onion, lettuce covered bread with a sprout covered slice, cut in half & enjoy.
