fresh strawberry, mango & avocado salad
i know, i know, i know, strawberries are on their way out, but life, you know, sometimes gets in the way of even the best intentions…which, for me, includes updating this blog more frequently.
don’t fear, this salad
with it’s honey, orange & lime juices, touch of balsamic & kiss of cayenne, can very nicely dress up the fruit that might be a little past its prime.
FRESH STRAWBERRY, MANGO & AVOCADO SALAD
serves 4
1 tablespoon honey
2 tablespoons orange juice
1/2 lime, juiced
pinch of cayenne
1/2 tablespoon balsamic vinegar (an aged one is prefect here)
kosher salt, to taste
1 tablespoon fresh cilantro, chopped
1 mango, pitted, peeled & cut into 1 inch cubes
1 cup strawberries, chopped
1 avocado, pitted & cut into 1 inch cubes
in a medium bowl, whisk together honey, orange juice, lime juice, cayenne, vinegar & salt. mix in the cilantro. add the mango & strawberries & toss to coat. let sit for 15 minutes, for the flavors to really come together.
just before serving, gently mix in the avocado. serve & enjoy.
