peanut butter cup bars

this is how i feel about camping.

in fact, the only things i really enjoy about it, {much to the husband’s dismay} are the campfire & the s’mores.  but thanks to a chiminea, s’mores making at home is possible!  without sleeping outside!  or sharing a disgusting bathroom {if there even is a bathroom} with a bunch of dirty strangers!

the only complaint that i do have when it comes to s’mores is the disproportionate packaging of all the ingredients.  which is why i’m not really here to talk about s’mores at all, i’m her to show you what you can make with the eleventy billion graham crackers that are inevitably left over.

& here it is.

not much to it in the way of ingredients or effort, but the end result is nothing short of amazing, although i’m not sure you could say anything less about an 8×8 giant peanut butter cup.   & if you have even a modestly stocked pantry, it too can be yours.

PEANUT BUTTER CUP BARS

makes 16 bars

3/4 cup unsalted butter, divided, plus a little more for dish buttering
1 3/4 cups powdered sugar
1 cup creamy peanut butter
3/4 cup graham cracker crumbs
1/2 cup semi sweet chocolate chips

line an 8×8 pan with foil, leaving enough foil overhang to use as “handles” later.  butter the bottom & sides of the lined pan & set aside.

in a medium saucepan, over low heat, melt 1/2 cup of butter.  once melted, remove from heat & stir in powdered sugar until smooth.  stir in the peanut butter & graham cracker crumbs.  continue stirring until thoroughly combined & smooth.  spread the mixture into the prepared pan & use a rubber spatula to even it out.

back in the same pan, add the remaining 1/4 cup of butter.  melt over low heat.  add the chocolate chips & stir until almost completely melted.  remove from heat & continue stirring until totally melted.  pour the chocolate over the peanut butter & spread into an even layer.

chill for 30 minutes in the fridge.  using the foil overhang, transfer from the pan to a cutting board.  then, using a sharp knife, cut into 16 squares.  store in an airtight container in the fridge.

    First of all I’d like to say the pb bars look delish, and secondly, we are one in the same when it comes to camping–no thank you! If you ever need company while Tom is on a camping trip, call me up…I’d gladly have a chimenea smore and hang out sans tent and bugs, spiders, snakes, etc…Love, your cousin
