apple chutney

I got this idea while craving a super tasty grilled brie sandwich from my friends/coworkers and my favorite place to grab lunch, Zest. It comes on foccacia with arugula and chutney from whatever fruit is in season, and it is fabulous.
So, we got some brie, made this chutney, and wrapped it all up in Pilsbury Crescent Recipe Creations and it was delicious, too.

The perfect balance of sweet and tart. Yum.

Simply Recipes ~ makes about 2 cups

2 large, tart apples, like Granny Smith, peeled, cored, and chopped
1/2 cup chopped onion
1/4 cup red wine vinegar
1/4 cup brown sugar
1 tbsp grated orange peel
1 tbsp freshly grated ginger
1/2 tsp allspice

1. Combine all ingredients in a medium saucepan. Stir well.

2. Bring to a boil. Reduce heat and simmer for 50 minutes. (We were concerned about the lack of liquid to actually boil, but don’t worry, it comes out fine!)

3. Uncover and simmer for a few more minutes to cook off excess liquid.
