tzatziki

My friend, Jamie, and I used to religiously go to a local Greek restaurant all. the. time. to get our Chicken Pita Combo fix…but mainly to get the tzatziki. I would eat the insides of my pita that had been covered in it, just to eat the pita itself with even more tzatziki, and even dipped some of my fries in it. It’s just that good. Other restaurant’s sauces don’t match up & i am not a fan of dill or mint in it either. Well, I finally found good combination, thanks Elly!
almost exactly from Elly Says Opa! (except I halved it)
16 oz Greek yogurt
1/2 hothouse cucumber
2 cloves garlic, crushed & finely minced
1 tsp white wine vinegar
salt and a little bit of pepper
a touch of fresh lemon juice

1. Peel and shred the cucumber. (I just did mine on a box grater) Put in a kitchen towel and squeeze every bit of water that you can out of it. You want to get out AS MUCH AS POSSIBLE, so the sauce won’t get watery. Yuck.

2. Mix all the ingredients together, chill for a little while before serving.

I just took a warm (pocketless) pita and topped it with grilled chicken, lettuce, chopped tomato of of course, tzatziki! Delicious! And now I can have it at home! (…which should be much better, since it won’t come with a side of fries…)
