black beans & rice

Tom just looked at me and said “Don’t you just mix black beans and rice together?” And you could…but if I’ve said it once on this blog, I’ve said it a thousand times. I am just not a fan of plain white rice. Now I know many of you out there like it, but really, if I’m going to eat something with calories, it has got to taste like something. White rice doesn’t do it for me. This does. Here we go!

1 cup uncooked white rice
olive oil as needed
1 small onion, chopped
1 red pepper, chopped
3 cloves garlic, minced
2 cans black beans, drained and rinsed
2 tablespoons white vinegar
Frank’s Red Hot, to taste
1 teaspoon dried oregano
salt and pepper to taste
1/2 cup fresh cilantro, chopped
1. Cook rice according to package directions. Set aside.
2. Heat some olive oil in a large skillet over medium high heat. Saute onions and bell peppper, until soft. Add garlic and cook for one more minute. Do not overcook the garlic.
3. Add black beans, vinegar and Frank’s. Bring to a boil. Reduce the heat and simmer for 5 minutes.
4. Stir in rice and oregano. Remove from heat and mix in cilantro.
