cinnamon bun pancakes

what’s more fitting to follow my pioneer woman post, than a recipe i saw on her recipe sharing site, tasty kitchenDSC01489are those cinnamon bun pancakes?  you bet your sweet ass they are.

well, i had pretty much been drooling over these since she featured them & it didn’t take long for me to break down and make them.  for dinner.

packed with all the delicious cinnamon flavor of a bun & topped with sweet glaze, these will satisfy your craving with way less work, or butter, than a regular cinnamon bun.  i think that’s a win-win.

FOR THE PANCAKES
1-½ cup all-purpose flour
3 tablespoons white sugar
½ teaspoons salt
4 teaspoons baking powder
1 tablespoon cinnamon
2 whole eggs, beaten
1 cup milk
2 tablespoons corn syrup
¼ cups butter, melted
1 tablespoon vanilla

FOR THE GLAZE
1 cup powdered sugar
¼ cups butter, melted
dash of salt
1 tablespoon maple syrup
¼ cups (more if needed)

1.  in medium bowl, combine flour, sugar, salt, baking powder and cinnamon with a whisk.  whisk well to make sure everything is combined.

2.  in separate large bowl, beat together eggs, milk, corn syrup, butter and vanilla.  stir in flour mixture.

3.  mix the glaze.  whisk all ingredients together until smooth, adding more milk as needed.

4.  heat a lightly sprayed griddle or frying pan over medium/low heat.  pour about 1/4 cup batter onto griddle.  brown on both sides.

top the cooked pancakes with glaze ( i added some glazed walnuts too) & dig in!
