black bean soup

easy, healthy & satisfying.this is it.

it’s the perfect meal to throw together when you’re too tired for much else.  the chiles bring big flavor, without packing much heat & the smoked, sweet paprika lends an intense heartiness without the addition of any meat.  there’s such great flavor, you’ll be surprised it’s so simple.

serves 4-6

extra virgin olive oil
1 small yellow onion, finely chopped
1 poblano chile, finely chopped
1 jalapeno, seeded & finely minced
2 cloves garlic, minced
2 teaspoons cumin
1 teaspoon smoked, sweet paprika
1 teaspoon dried oregano
2 cans black beans, drained & rinsed
4 cups chicken or vegetable broth
salt to taste
chopped fresh tomato & green onion, for topping

1.  heat a little bit of oil in a dutch oven, or large pot, over medium heat.  add the onion, poblano & jalapeno & cook until soft, about 5 minutes.  add the garlic & cook for 2 minutes more, being careful not to let the garlic burn.

2.  add the spices, beans & broth.  bring to a boil, reduce to simmer & cook for 30 minutes, until thickened.  ladle into individual serving bowls & top with chopped fresh tomatoes & green onions.
