my coworker sent me this recipe just in time for our iron chef: battle peach.
i found it oddly intriguing.
it was a vegan recipe to begin with, sweet corn, peaches, fresh basil…all the fresh flavors of summer cooked together with almond milk {i’m sure regular milk would be fine, but the husband seems to be lactose intolerant, so we went with it}, onion & miso paste. well, we couldn’t find miso paste & i was a little concerned that, with all the other ingredients in mind, the soup would taste a little too sweet, so we did what any other rational people would do…
…we added bacon.
it was totally a good decision.
the bacon & it’s delicious fat gave the corn & peaches the depth & saltiness they needed to really shine & maybe miso could have provided it, but…bacon.
SWEET CORN & PEACH SOUP
makes 8 servings
6 ears sweet corn
1/4lb bacon, diced
1 white onion, diced
2 cloves garlic, finely minced
4 cups vegetable broth
2 cups water
pinch of cayenne
3 large peaches, peeled, pitted & diced
1 1/4 cups unsweetened almond milk (or regular milk)
kosher salt, to taste
12 basil leaves, julienned
with a large, sharp knife, cut the kernels from the corn cobs. set aside both the kernels & the cobs.
in a dutch oven, or heavy bottomed pot, cook diced bacon over medium heat until brown & crispy. remove with a slotted spoon let drain on a paper towel lined plate. add the onions & garlic & cook just until fragrant, 1-2 minutes.
add the corn kernels, corn cobs, veggie broth, water, cayenne & peaches. turn the heat to high, bring to a boil & reduce to a simmer. simmer, uncovered, for about 30 minutes, until corn & peaches are very tender.
once the corn & peaches are tender, remove the corn cobs & discard. using a blender, puree half of the soup, being very careful to let the steam escape (keep the lid just barely cracked). pour back in the pot, add the almond milk & reheat over medium heat. do not boil. season with salt, if necessary.
to serve, ladle the soup into individual bowls. top with diced peach, julienned basil leaves & diced bacon. enjoy!

YUM! I wouldn’t think to put corn and peaches together –like the audible on the bacon (esp since it is a vegan recipe). Nice call 🙂 We are definitely making this soup this weekend!
