mexican pizza

as promised, tequila lime chicken part deux.

the light citrusy flavor lives on…in the form of pizza: the food i never tire of.

unfortunately for my ass fortunately, we live somewhere that has a pizza place for every craving.  papa johns, when i just want something bready with a lot of cheese.  {& garlic sauce.}  mellow mushroom, when i just need a magical mystery tour {every other day, precisely}.  brixx, when i want pizza, but not the guilt, since it’s essentially a cracker with some toppings.  {a very, very tasty cracker.}  milton’s, when it’s crust that i crave.  {i may or may eat entirely around the toppings.}  chow, when i’ve already eaten through all the other menu items.  {& we can walk there.  winning!}  & then there’s zpizza.  it’s fresh, it’s organic & it’s where we always order the mexican pizza.  {no matter what.}

but with this leftover tequila lime chicken & a handful of other ingredients, we’ve made something so close, we don’t even have to make ourselves presentable enough to leave the house & go pick it up.  {since we don’t live within their 3 mile delivery radius.}

MEXICAN PIZZA
serves 4

pizza dough
1 cup salsa (we like this recipe), excess liquid removed
1 cup monterrey jack cheese, freshly grated
1/4 red onion, very thinly sliced
1 leftover breast tequila lime chicken, thinly sliced, or other cooked chicken
3 green onions, thinly sliced
1 avocado, thinly sliced
1/4 cup sour cream
1/2 cup fresh cilantro, chopped

preheat oven & pizza stone to 500°.  flour the pizza dough, your hands, & work surface very well with flour.  flatten the pizza dough into a disc, drape over a closed fist & let stretch down over your hand.  rotate so it keeps a round shape.  continue rotating until the dough has formed a 12 inch circle, or, alternatively, roll it out to a 12 inch circle.

spread the salsa over the dough, leaving about 1 1/2 inches for the crust.  top with cheese, then red onion, chicken & green onions.

transfer to the hot oven & bake for 10-12 minutes.  remove from oven & let cool for a few minutes.  top with avocado slices.  add the sour cream to a plastic baggie & snip off a small piece of the corner.  drizzle over top of the pizza.  sprinkle with cilantro, slice & serve.
