blue cheese scallion drop biscuits

i’ve been seeing biscuits all over the place the past couple days, so i figured it was about time to share these.  

not that i haven’t wanted to before now.

it’s just that every time i’ve sat down to write lately, i feel like i’ve run out of words.

but in reality, i haven’t been able to get these biscuits outta my head.  they’re like the blue cheesy, green oniony cousin to the universally loved cheddar garlic biscuit.  only one bowl required.  no rolling.  no cutting.

BLUE CHEESE SCALLION DROP BISCUITS

makes one dozen biscuits (give or take the 3 you devour before serving)

2 1/4 cups all purpose flour
2 1/2 teaspoons baking powder
2 teaspoons granulated sugar
3/4 teaspoons baking soda
1 teaspoon salt
6 tablespoons unsalted butter, cold & cut into 1/2 inch cubes
1 1/2 cups blue cheese, crumbled
4 scallions, finely chopped
1 cup buttermilk

preheat the oven to 450°.  line a baking sheet with parchment paper.

in a large bowl, whisk together the flour, baking powder, sugar, baking soda & salt.  add the butter & rub between your fingertips until it forms coarse crumbs.  fold in the blue cheese & scallions with a wooden spoon.  add the buttermilk & stir until combined.

drop in 12 equal balls on the prepared baking sheet & bake for 16-20 minutes, until golden brown.

make ahead: freeze the unbaked mounds on the baking sheet & transfer to a freezer bag.  bake straight from the freezer, adding just a few minutes to the baking time.
